Eggplant Paste / Pasta de Berinjela



(English version after Portuguese)

Receita carinhosamente preparada pelo meu irmão!



Ingredientes:

- 2 berinjelas grandes
- 1cebola branca média e 1 cebola roxa média picadas
- Azeite de oliva
- Sal a gosto.

Preparo:

Corte as berinjelas em rodelas e tempere com sal, deixe descansando por ½ hora, depois “amasse” os pedaços de berinjela com as mãos para retirar o excesso de água e corte em pedaços menores.

Refogue as cebolas e as berinjelas no azeite de oliva até que as berijelas estejam bem macias!

Sirva como entrada com fatias de pão; usamos o ciabatta.

Eggplant Paste

Ingredients:

- 2 big or 3 medium eggplants
- 1 medium white onion and 1 medium red onion
- Olive oil
- Salt to taste.

How to prepare:

Slice the eggplants and taste with salt, let rest for ½ hour, the “squeeze” using your hands to remove the excess of water and cut in small pieces.  

Sauté the onions and eggplant with olive oil and cook until they are very smooth.

You can serve it as a side dish or with bread as a snack; we served with ciabatta bread.

Chicken with Coffee Sauce / Frango ao Molho de Café

Receita fácil e simples de preparar; fica a sugestão para o almoço de Domingo!



Ingredientes: (para 6)

- 1 col.(sopa) de azeite                                        - 1 col.(chá) de sal
- 1 cebola picada                                                 - ½ xíc.(chá) de café
- 2 dentes de alho amassados                            -1 col.(sopa) de amido de milho
- 400g de peito de frango em cubinhos              - 1 xíc.(chá) de leite desnatado
- 1 embalagem de creme de leite light               -2 col.(sopa) sálvia

Preparo:

Aqueça o azeite e refogue a cebola e o alho. Adicione o frango temperado com sal e deixe dourar bem. Acrescente um pouquinho de água e cozinhe. Adicione o café e deixe evaporar. Misture o amido de milho dissolvido no leite e espere engrossar. Acrescente o creme de leite e a sálvia e esquente bem.

Chicken with Coffee Sauce

An easy and yummy recipe! A different suggestion to your Sunday lunch or dinner! 

Ingredients: (serve 6)

- 1 tbs of olive oil                                                - 1 tsp of salt
- 1 chopped onion                                               - ½ cup of coffee
- 2 smashed garlic glove                                    -1 tbs of white corn flour
- 400g of chopped chicken breast                     - 1 cup of fat free milk
- 250ml of low fat evaporated milk                    -2 tbs of sage leaves

How to prepare:

In a sauté pan heat the olive oil and add the onion and garlic. Add the chopped chicken flavored with salt and cook until begins to brown. Add a little bit of water and cook. Add the coffee and let it evaporate. Add the white corn flour dissolved and mixed in milk and let it turn thick. Lastly add the evaporated milk and sage leaves.
